Appetizers Cowboy Salsa Ingredients: 3-5 (depending on size) Roma tomatoes, chopped 1 small red onion, chopped 1 can black beans, rinsed well 1 can shoepeg corn 1 / 4 cup olive oil 2 TBSP apple cider vinegar 1 packet zesty Italian dressing Instructions: Combine first four ingredients in bowl In a measuring cup, mix the oil, vinegar, and packet of Italian dressing. Pour mixture over salsa and mix well Serve with tortilla chips Pinwheels Ingredients 2 pkg (8 oz) cream cheese, softened 1 pkg (1 oz) Hidden Valley Ranch Original Dressing mix 2 green onions, minced 4 (12 inch) flour tortillas 1 jar (4 oz) diced pimento 1 can (4 oz) diced green chiles 1 can (2.25 oz) sliced black olives Instructions Mix first 3 ingredients. Drain vegetables and blot dry on paper towels. Mix all ingredients together and spread on tortillas. Roll tortillas and wrap in Saran wrap. Chill at least 2 hours. Cut rolls into one inch pieces. Discard ends. Makes 2 dozen. Spinach Dip Ingredients 1 cup sour cream 1 pkg Knorr's Vegetable soup mix 4 chopped green onions 6 water chestnuts (sliced) 1 (10 oz.) pkg frozen spinach, thawed and drained well Instructions Mix above and refrigerate 3-4 hours. Serve with bread or Club crackers. Beer Dip Ingredients 2 pkgs (8 oz. each) cream cheese, softened 1/3 cup beer 1 env. Ranch salad dressing mix 2 cup shredded Cheddar cheese Instructions Mix above ingredients. Serve with pretzels.
