# Cowboy Salsa

<span style="text-decoration:underline;">**Ingredients:**</span>

- 3-5 (depending on size) Roma tomatoes, chopped
- 1 small red onion, chopped
- 1 can black beans, rinsed well
- 1 can shoepeg corn
- <sup>1</sup>/<sub>4</sub> cup olive oil
- 2 TBSP apple cider vinegar
- 1 packet zesty Italian dressing

<span style="text-decoration:underline;">**Instructions:**</span>

- Combine first four ingredients in bowl
- In a measuring cup, mix the oil, vinegar, and packet of Italian dressing. Pour mixture over salsa and mix well
- Serve with tortilla chips

# Pinwheels

**<span style="text-decoration:underline;">Ingredients</span>**

- 2 pkg (8 oz) cream cheese, softened
- 1 pkg (1 oz) Hidden Valley Ranch Original Dressing mix
- 2 green onions, minced
- 4 (12 inch) flour tortillas
- 1 jar (4 oz) diced pimento
- 1 can (4 oz) diced green chiles
- 1 can (2.25 oz) sliced black olives

<span style="text-decoration:underline;">**Instructions**</span>

Mix first 3 ingredients. Drain vegetables and blot dry on paper towels. Mix all ingredients together and spread on tortillas. Roll tortillas and wrap in Saran wrap. Chill at least 2 hours. Cut rolls into one inch pieces. Discard ends. Makes 2 dozen.

# Spinach Dip

<span style="text-decoration:underline;">**Ingredients**</span>

- 1 cup sour cream
- 1 pkg Knorr's Vegetable soup mix
- 4 chopped green onions
- 6 water chestnuts (sliced)
- 1 (10 oz.) pkg frozen spinach, thawed and drained well

<span style="text-decoration:underline;">**Instructions**</span>

Mix above and refrigerate 3-4 hours. Serve with bread or Club crackers.

# Beer Dip

<span style="text-decoration:underline;">**Ingredients**</span>

- 2 pkgs (8 oz. each) cream cheese, softened
- 1/3 cup beer
- 1 env. Ranch salad dressing mix
- 2 cup shredded Cheddar cheese

<span style="text-decoration:underline;">**Instructions**</span>

Mix above ingredients. Serve with pretzels.
